Who We Are
Robby Grubbs passion started for coffee in the late 1980’s living in Boulder, CO and hanging out at the local coffee shop on a snowy day. This passion grew as I went to work for the biggest coffeehouse chain in the world and opened the first of its many locations in Texas. I for the first time learned about brewing standards, cupping (tastings) different single origin coffees from around the world, etc.. After the opening the second store in Texas and the introduction of blenders, I decided to come home to San Antonio to work with my family in residential construction and real estate. A rewarding and successful career in residential construction and development led my wife and two sons to Austin where I immediately found the fond memories of Boulder in the local and independent coffee houses. There was one in particular that I heard the coffee was “out of this world” good and the baristas were serving espresso drinks like craftsmen all with art on top of the milk (which I quickly discovered was latte art…Rosetta). The coffee was and is “out of this world”. As a result I realized the coffee was Cuvee coffee micro-roasted out of Austin. After about a year of my morning ritual of my favorite coffee spot my creative mind started stirring, all my life experiences, green construction, the old brewing standards taken to a new level, coupled with the best micro-roast in the world, the positive experience of giving back and the importance of community. So the process of Local Coffee becoming a reality started. I told Neesha my ideas and of course she kind of wrinkled her brow, but heard me out. It was hard to be skeptical about a great idea born from the best cup of coffee I have ever experienced. So what better and more deserving place to do this than my loyal hometown of San Antonio. Well as they say “the rest is history”. With overwhelming support from Neesha, my boys and of course my Mom (grandkids back in SA!!) Local Coffee was created…..
We first had to insure that Cuvee Coffee was on board, especially since their attention to detail was the exact reason that inspired Local Coffee. The next step was location, location, location! This was easy after looking for coffee on Easter Sunday I drove up on an end space with excellent parking, a great area for outside seating, and a very well thought out retail center and I looked no further…this was MY spot!
The developer was my kind of people and instantly “got” my vision and recognized my passion about Local. Shortly thereafter I designed the space with as many “GREEN” components as I could plug-in, such as…reclaimed pine flooring, reclaimed pine skins and end cuts, no VOC paints, leftover materials, MDF cabinets, CFL bulbs, etc.
Needless to say we got to put all of our life’s experience, and passion into Local Coffee but we promise to never lose sight of….ITS ALL ABOUT THE QUALITY OF OUR DRINKS and the “Local Experience”
